Tart Tip

Wendy has sent us this tip: Make and bake little pastry cases in advance and keep in the freezer. When you need to take a plate, fill with creamy or chocolatey filling and fruit while still frozen – this helps keep the tartlets cold when transporting.

Lemon cheese/spread is delicious also in them with a wee dollop of whipped cream on top sprinkled with chocolate powder. Yum!

When making pies with pastry it is good to grate a little chees over bottom sheet of pastry then add fillings as it makes the pastry crispy and not soggy.
