The modern harvest

Hopefully your garden has been as prolific as mine and you have enjoyed a great season. But if like me you have had an excess of certain vegetables like courgettes our recent recipe Courgette & Tuna Rosti with Garlic Mayo will help with the overflow. Courgettes can also be grated and frozen to use in stews, soups and muffins when summer has finished.
I have had far too many cucumbers and beans so friends and family have enjoyed these as there’s not much one can do with too many cucumbers and I’ve been too busy to freeze beans but am not always pleased with the result of home freezing.

The tomatoes are not as good as other years but more than we can eat so when I have been too busy I cook 2kg down a little and this size works well for my favourite chutney and sauce recipes to make later when I have more time.

I’m over making pesto with the basil and the freezer is full, I guess that’s modern harvesting.
